Ever wonder what part of the artichoke plant you are eating?
The edible portion of the artichoke is actually the flower bud of the plant. If allowed to flower, the blossoms are a deep violet-blue and can reach seven inches in diameter.

Fascinating plant and food. I didn't know what an artichoke was until the 80's. I've discussed artichokes with my friends and a gal born and raised in California was the first of all my friends to have been exposed to them. She's been eating them since she was a little kid in the 50's. The rest of us from the northwest and south didn't know about them until many years later. Now I have a better understanding as to why.
