Pesto Chicken Sandwich with Cara Mia Sundried Tomatoes
Ingredients:
- Boneless, skinless chicken breast
- Salt and Pepper, to taste
- STAR Fine Foods extra virgin olive oil
- Sandwich bread of your choice
- Sliced Provolone cheese
- Cara Mia Sun Dried Tomatoes
- Mayonnaise
- Pesto sauce
- Fresh Romaine lettuce
- Red onion (optional), julienned
Directions:
Allow a heavy-duty grill pan to heat for 2-3 minutes on high heat then lower the heat to medium and pour about 4 tablespoons of olive oil. Meanwhile, slice the chicken breasts thinly and season with salt and pepper on both sides.
Place chicken breasts in hot oil and allow to fully cook (about 5-6 minutes per side). When ready, set aside.
Add mayonnaise to two slices of bread, top with provolone cheese. Place slices of bread with cheese inside a toaster oven and allow cheese to melt (2 minutes). Take the bread out of the oven, set on a serving plate. Spread pesto sauce over the bread and top with the chicken breast, sundried tomatoes, fresh romaine lettuce and onions (optional).
Slice sandwich in half and enjoy!
