artichoke, chickpea & cucumber salad

ingredients:
- 6.5 oz. jar Cara Mia Marinated Artichoke Hearts, chopped
- 15 oz. can chickpeas or garbanzo beans, drained and rinsed
- 1 cucumber, unpeeled and chopped
- 1 tomatoes, diced
- 2 tsp. fresh garlic, minced
- 1 1/2 Tbsp. dried parsley
- 1 Tbsp. STAR Extra Virgin Olive Oil
- 2 Tbsp. STAR Balsamic Vinegar
- 1/4 tsp. salt
directions:
- In a medium serving bowl, toss together all ingredients.
- Cover and refrigerate at least 1 hour. Serve and enjoy!
