Cara Mia Artichokes and Sun Dried tomatoes
This recipe was so easy and SOOO GOOD! Great for a quick weekday meal!
ingredients:
- 1 (15 ounce) Cara Mia Artichokes in Water
- half a bunch of parsley
- 3/4 cup mayonnaise
- 1 clove garlic
- 4 skinless, boneless chicken breast halves or boneless skinless thighs
directions:
- Preheat oven to 375 degrees F (190 degrees C).
- In a food processor, chop the artichoke hearts, parsley and garlic. Then mix in the mayonnaise.
- Place chicken in a greased baking dish, and cover evenly with artichoke mixture.
- Bake, uncovered, for 30 minutes in the preheated oven, or until chicken is no longer pink in the center and juices run clear.
