Cara Mia Mama Mia Salad
Vegetables are an essential part of a healthy diet, and what better way to enjoy them than this colorful, perfectly balanced salad. Even the pickiest eater will enjoy it!

Serves 4
3 endive, sliced thinly crosswise
1 large handful arugula
2 heads romaine lettuce, sliced thinly crosswise
1 cup baby tomatoes sliced in half
1/2 cucumber sliced thinly
3 Cara Mia hearts of palm, sliced thinly crosswise
½ jar Cara Mia marinated artichokes, drained
5 Cara Mia piquillo peppers, sliced thinly
¼ cup Cara Mia sun dried tomatoes
1 cup mixed berries (raspberry, blueberry, blackberry)
Star extra virgin olive oil
STAR red wine vinegar, garlic flavored
Sea salt & fresh ground pepper
- Combine all the vegetables and berries in a large bowl and toss gently.
- Pour a few swirls of olive oil and a few shakes of vinegar over the salad. Sprinkle with sea salt and few grinds of pepper over the salad and toss gently. Serve.
