Creamy Artichoke Nachos
Recipe courtesy of our friend Oscar from Oscarin’s Kitchen. It’s a delicious twist to the traditional nacho recipe using Cara Mia artichokes and piquillo peppers. Because recipes are like rules and are meant to be broken, try this mouthwatering recipe at your gathering and wow your guests!
Serves 4 people
½ stick Butter
½ cup Onion (diced)
5 cloves Garlic (minced)
½ Tbsp Flour
1 ¼ cup Heavy Cream
4oz Cream Cheese
1 ½ cup Mozzarella Cheese
½ cup Parmesan Cheese
Salt to Taste
1 jar Cara Mia – Artichokes
7oz Spinach (cooked/frozen)
1 large bag Tortilla Chips

Cara Mia – Piquillo Peppers
Step 1: In a medium pot on medium-low heat bring together butter, onion, and garlic. Cook until onions are translucent.
Step 2: Add flour, constantly stirring and cooking for 1 minute.
Step 3: Add heavy cream and cream cheese. Bring to a simmer making sure the cream cheese is completely melted.
Step 4: Add mozzarella and parmesan cheese. Bring to a simmer making sure all the cheeses are completely melted. Add salt to taste. If the consistency of the melted cheese is too thick add a lit bit of heavy cream to bring the cheese to a nacho cheese consistency.
Step 5: Add 1 jar of Cara Mia Artichokes. Drain and chop the artichokes before adding them to the cheese. Stir in spinach (if using fresh spinach, cook ahead of time before adding to the cheese)
Step 6: On a large plate layer out tortilla chips and top off with the artichoke cheese. Garnish with Cara Mia Piquillo Peppers and enjoy!
