grilled artichoke hearts & tuna salad
This salad is perfect as a sandwich filling with your favorite bread or mound it on top of cooked slices of eggplant or portobello mushrooms for a bread-less treat.
ingredients:
- 2 (6-ounce) cans tuna in water, drained
- 1/2 jar of Cara Mia Grilled Artichoke Hearts
- 1 onion
- 2 tablespoons parsley
- 1 lemon, juiced
- 6 dashes hot sauce, or to taste
directions:
- Combine onion and artichoke hearts in food processor and chop.
- Mix with the rest of the ingredients and mix well.
- Taste and adjust seasonings.
