Grilled Prosciutto Wrapped Artichokes
With Piquillo Pepper Dip
These grilled artichokes wrapped in prosciutto make a great appetizer for a barbecue and can be easily prepared. It’s also a great recipe to get the kids to help in the kitchen.

ingredients:
- 1 jar Cara Mia Grilled Artichoke Hearts
- 6 oz. sliced prosciutto
- 4 Cara Mia Piquillo Peppers
- 6 oz. mayonaise
- 1 jar of Cara Mia Sun Dried Tomatoes
- 1 tsp. salt
- 1 tsp. pepper
- 1 tsp. garlic powder
- 1 tsp. cayenne
directions:
- Wrap 1-2 artichoke hearts together with one slice of Prosciutto, you can stick a toothpick to hold them in place.
- Place the wrapped artichokes on the top rack of the barbecue grill for 15 minutes. You want the prosciutto to get crispy and for the artichokes lose some of their moisture. After 15 minutes take them off the grill and let them rest.
- While they rest, let’s make our piquillo pepper dip. Poor mayonnaise into a blender along with Cara Mia Piquillo Peppers.
- Pulse in the blender in order to leave some bits of the peppers. You don’t want a complete puree’. Add salt, pepper, garlic powder, and cayenne.
- Pulse once more then poor into a small bowl and enjoy the wrapped artichokes and dip!
