What Exactly Is An Artichoke

The artichoke is a perennial in the thistle group of the sunflower family and is believed to be a native of the Mediterranean.
Most artichokes grown worldwide are cultivated in France, Italy, and Spain, but California provides nearly 100 percent of the United States crop.
The Artichoke takes about 6 months for the buds to be ready to eat. They can be harvested as many as 30 times in a season. The peak season for artichokes is Spring and Fall but they can be harvested through the summer months as well.
